Ceylon Cinnamon
Cinnamon is one of the most antioxidant-rich herbs on the planet. It has been revered by nearly every culture for centuries for its sweet taste and pleasant aroma. Cinnamon is used as a spice and aromatic. True cinnamon is obtained from the bark of trees native to Sri Lanka, the country formerly known as Ceylon by a past ruler of European origin. It is due to this European influence that true cinnamon is more commonly referred to as “Ceylon Cinnamon” to aid in distinction from cassia, which is found in China, Indonesia, and Vietnam. Ceylon cinnamon, with thin golden brown flaky layers that are easily cracked, is considered more flavorful and less strong than cassia, a light to medium reddish bark that is more notably thick and harder to break. In the United States markets, cassia is often advertised and sold as cinnamon and rarely labeled with its true origin, such as “Indonesian Cinnamon" etc.
